    Hi. In the Croissants course by Chef Bachour his sheet pan has no edges. I suspect it is a half pan sheet. When I google half pan sheets I get a zillion options. For example: insulated, perforated, aluminum, Teflon etc. ideally what should I be looking for? Anything in particular? Thank you in advance. I tried your new AI for the answer but it wasn’t really helpful.
