Scoolinary Forums Ask a question Scoby

How do I make a scoby/buy a scoby disc to make the kombucha? It just appears in the video showing how to make kombucha but it doesn’t explain how to make it? Or did I not understand or miss something….

    Hi Patricia.

While you can find SCOBY in several places like natural food stores, farmers’ markets, or home brewing supply shops, you also have the option to get it online from sites like Amazon or fermentation specialists like Cultures for Health. You can even find SCOBY through social media groups, or from friends or family who already brew kombucha.

But if you’d like to start your own SCOBY, here are the steps to do it at home. All you need is a couple of cups of unpasteurized, plain kombucha. To make the process easier, I recommend using sweet tea as well.

    Ingredients:

250 ml of unpasteurized, plain kombucha.

    250 g of sugar.

5-6 bags of green or black tea.

    1.5 L of water.

    Instructions:

-Leave the kombucha out of the fridge for a few days.

-Boil the water, remove it from the heat, and add the tea bags. Let steep for 10 minutes.

    – Dissolve the sugar in the tea and let it cool to room temperature.

    – Pour the mixture into a jar, add the kombucha, cover with a cloth, and let it ferment in a well-ventilated place, away from direct sunlight.

    – After about a week, the SCOBY will be ready once it reaches 1 cm in thickness.

The resulting mixture can be used as a starter tea for future kombucha batches.

We hope this information is helpful.

    Best regards.
