Yes, you can use your convection oven (with the fan), but some adjustments are needed because the fan generates more heat and can affect the baking process. Here’s what I recommend:
Lower the temperature: Reduce the oven temperature to around 190°C or even 185°C, as the heat circulates faster with the fan.
Monitor the time: Start checking the cheesecake about 5 minutes earlier than the suggested baking time (around 20 minutes) to make sure it doesn’t brown too quickly.
Protect the top: If you notice that it’s browning too soon, you can gently cover the top with aluminum foil during the last few minutes of baking.
Check the texture: The center of the cheesecake should still have a slight “jiggle” when you take it out of the oven, as it will continue to set while cooling.
With these adjustments, you should achieve excellent results.
