Replace – Substitute – Ultratex ‘3’ in Cider Apple
Posted by WAGNER GARCIA on January 22, 2024 at 04:20In Chef Damien Wager’s Lifelike Fruits and Nuts course, he uses Ultratex ‘3’ in the Cider apple insert recipe. I don’t have access to this ingredient. What ingredient could be substituted for Ultratex ‘3’ and what weight would it be? Thank you

Hi Wagner
This is a thickener that is used cold, but since it is not accessible you can change it for a thickener that must be cooked to obtain the same result, you can try cornstarch as a thickener.
