What is the name of the plastic he wraps the dough in when he puts in the freezer? It’s not plastic wrap, looks like a reusable type of plastic wrap…does anyone know the name?

It is usually vinyl, which is thicker than plastic and withstands freezing and oven.

They are thin sheets of plastic that are used for chocolate and pastry. In Spanish they call it “papel guitarra” and in English you could look for it as dipping paper.
