Question about Plating Topping
Posted by Andrew Freire on March 29, 2024 at 19:47I was curious if anyone knows how this plating was achieved?
My guess is it looks like carrots, peeled into ribbons and deep fried, topped with glazed carrots and microgreens.
Has anyone done anything like this or point me to recipes to achieve this look?

They look like very thinly sliced carrots made in a deep fryer or perhaps fried.
