    I was curious if anyone knows how this plating was achieved?

    My guess is it looks like carrots, peeled into ribbons and deep fried, topped with glazed carrots and microgreens.

    Has anyone done anything like this or point me to recipes to achieve this look?

    They look like very thinly sliced carrots made in a deep fryer or perhaps fried.

    Does this preparation belong to any Scoolinary course?

    Thanks for your response. This was not from a particular course- just saw the image online and was hoping to get some ideas from fellow chefs in the community
