Poke rice
Posted by Agnese Miljona on January 2, 2025 at 21:22Hello, is there any alternative to the leave you are placing into the sushi or poke rice? Can it be nori? Because I have never seen such a leave in my country

If you don’t have access to dried kombu seaweed, there are alternatives you can use. While kombu is ideal for adding umami flavor to rice, you can try the following:
Nori: Although nori has a different flavor profile than kombu, you can crumble it and add it to the rice to give it a subtle sea-like flavor. It’s not exactly the same, but it can work as an alternative.
Dried mushrooms (shiitake): Soaking dried mushrooms in water can create a similar umami flavor. You can then use that liquid to cook the rice.
Instant dashi broth: If you have access to dashi powder (which contains kombu and bonito), you can dissolve a small amount in the water used to cook the rice.
Seaweed-enriched sea salt: Some stores sell salt mixed with seaweed, which can provide a similar touch of flavor.
