    besides flowers, what other tiny(light weight) pieces can I use to decorate a dish ???

    I’m from Sierra Leone and a lot of the flowers that are used to decorate are hard to come by.

    Hi Jonathan, first one that comes to mind is microgreens or herbs. An easy to find if it suits the dish might be something like chilli sliced diagonally or sweet red peppers. Seeds and crushed pistachios may be suitable for some dishes and even just a puree might work with nothing else. I am only just learning myself and the three plating courses have some good information.

    Hi @jonathan-bunting-williams

    As an alternative decoration you can use chocolate filigrees, filigrees made with tulip dough. You can even make small chocolate or fondant flowers, let them dry, and then use them to decorate your plate. Tulip dough filigrees are used to decorate desserts and savory dishes.

    You can also use leaf sprouts or any sauce.

    Hi! You can always try to use some thin long cuts of green onions, or carrots for example in ice water and will curve very nicely.

    Also you can make easy tuile mix with 90gr flour, 110ml water and food colorant and straight to the pan with a bit oil

    Also you can make cheese sheets with Parmesan and flour 100/100gr. each and bake it in sheet pan at not too high temperature til cheese melts and gets a nice color.

    I love plating and play with colours on the plate however, I think that sometimes you don’t need to overdecorate because the dish with its components is the decoration itself.
