    With the freezer mixer technique, once the ice cream is made and placed in the freezer, how do I obtain that texture everytime I want to consume it? Does it maintain the texture naturally or would I have to thaw slightly and mix again?

    Hi Indira.

    With the immersion blender and freezer technique, the ice cream generally retains a good texture if the freezing and blending process has been followed correctly. However, since this type of ice cream doesn’t contain stabilizers, it may harden more than commercial ice cream.

    To achieve a creamy texture when serving, it’s best to let the ice cream rest in the refrigerator for a few minutes before consuming so it softens slightly. There’s no need to re-blend it with the immersion blender each time you take it out, as that could affect its structure and make it melt too much. A few minutes of resting should be enough to enjoy a pleasant texture.
