Hi Brenda.
Yes, you can replace NH pectin with citrus pectin, although there are some differences in their properties. NH pectin is ideal for jams and jellies that require a firmer texture and gelling at lower temperatures, whereas citrus pectin generally needs sugar and acidity to work properly.
To substitute it, I recommend following the manufacturer’s instructions for citrus pectin, as the ratio depends on the concentration and type of pectin you are using. However, a general rule is that citrus pectin has a stronger gelling power, so you’ll need to use less than you would of NH pectin.
I would suggest starting with about 1/3 of the amount of NH pectin required in the recipe and adjusting based on the results. Be sure to also add enough sugar and acid (such as lemon juice or citric acid) if the recipe calls for it, to properly activate the citrus pectin.
I recommend doing a small test to see if replacing the pectin gives you the desired result.
