    Hi there…

    After the forth refreshment of the sourdough how do we wrap it up?because the chef show us the sourdough already rapped at the first solid refreshment.

    ▪️ Wrap it in a clean cloth:

    Place the sourdough block in a clean, dry linen or cotton cloth.

    ▪️ Tie it with string:

    Use string to tie the package firmly, as shown in the photo. This will help maintain its shape and control the fermentation process.

    ▪️ Final fermentation:

    Let the sourdough rest according to the chef’s instructions.
