    Hi Joelle.

    Monaka shells are a type of crispy wafer made from glutinous rice and filled with various ingredients. They are similar to a mochi wafer, as the shells are made from toasted glutinous rice and have a light, crunchy texture.

    Monaka shells can be purchased ready-made at Japanese sweet shops, specialty supermarkets, and online.

    At the moment, we don’t have the recipe in our cookbook, but here is an adaptation of tulip batter that you might find useful.

    Recipe:

    50g rice flour

    50g softened butter

    50g egg whites

    Instructions:

    1. Beat the egg whites with the softened butter.

    2. Add the rice flour and mix until smooth.

    3. Spread the batter onto a silpat and form small circles.

    4. Bake at 145°C (293°F) for 5-6 minutes.

    5. While still warm, shape them using the bottom of a glass to create a cavity.

    6. Let them cool, and they will be ready to use as a substitute for monaka shells.
