Mango Antremet Antonio Bachour
Posted by Shirley Saban on September 20, 2024 at 22:22Hi,
The recipe in the pdf is for 3 cakes, but what is the size of each cake?.. I plan to prepare it in a 20cm ring, how do I convert? (enough if I know the final size of each cake, I can then calculate).
Thanks!

Hi Shirley
The interior layers of the entremets have a diameter of 16 centimeters (sponge cake, mango compote, etc.).
The final or assembly mold has the following dimensions:
Dimensions: Ø 180 mm x 45 mm H Volume:1000 ml
The mold used by the chef is from the Pavoni brand. Here is the direct link with the specifications for the assembly mold: https://pavonitalia.com/en/products/planet-ke024
We hope this information is helpful.
Best regards.
