    Hi, @dimitriskaprlive-com

Yes, it is possible to ferment foods with lacto-fermentation without salt, you must introduce live, good-for-you bacteria. There are two ways to do it:
Adding whey or a brine from a previous ferment.

We hope this information is helpful.
    Greetings.

    Hi, @dimitriskaprlive-com

Yes, if you can. Fermentation is also used to give foods different textures and flavors. Lactic acid fermentation of fruits and vegetables is now used to help maintain and, in some cases, improve the nutritional qualities of some foods.

We hope this information is helpful.

    Greetings.
