Ice cream parlour formula >
Posted by Adriaan Moeys on July 11, 2024 at 22:23I’m following “Fundamentals of artisan ice creams”.
I think the table with the calculation in chapter 4 “Ice cream parlour formula” is not correct. If 100g cream contains 35g of fat, how can 172g of cream contain only 6g ?
It seems to me like the correct formula would be: 172 x (35 / 100) = 60,2gAlso at the bottom: 8g on a total of 1000g is not 8%, it’s 0,8%.
Please confirm.

The content team informed me of the following:
For whole milk, it is divided by 1000 because the calculation is based on 1000 grams or kilo, what will matter will be the percentage value, that is, the sum of 8% of fat with respect to the entire ice cream formula.
Answering your second question, the correct amount is 8% since the Chef says it verbatim in the video.
Greetings.

Hello Susan,
I did check out the videos, indeed those are clear.
But the visuals are mixed up between percent en Total grams on 1000.
Kind regards
Adriaan
