    Hi, if I wanted to use half the recipe for croissant, what would the measurement for the sheet be?

    One dose of the recipe is 50×30, Mr Bachour mentioned that if we want to double it to make it 60×40, but what about half?

          But that would be half the size of the dough. He teaches one 3rd folding method. So shouldn’t it be 20×30 butter ?

            For the full recipe the butter is 30×30 (square) centimeters and for half the dough it would be 20×20 (square).

    But 20×20 butter will not give you 2/3 fold on 20×40 dough. It will give you half fold. I’m I missing something perhaps ? I’m looking for the 2/3 fold as the way he was teaching.

      There is only one block of butter and what the chef indicates is that it is a square on a rectangular-sized dough to be able to form the folds. There are many methods to fold croissant dough, but the butter block is always only one.

    That is correct. A square on rectangle to create 2/3 folds. However the numbers you have are square dough on square butter block so it cannot form 2/3 folds. It can only form half folds. I am asking about exactly how the chef taught it for 2/3 folds.

      Sussan. You are not getting the point of her question.

      You’re saying 40×20 then the butter should be 20×20

      Antonio says the butter should cover 2/3rds of the dough, this is so you can correctly fold the butter in (this is the English method). So for him, 50×30 the butter is 30×30 which is right.

      20×20 butter on a dough rectangle of 40×20 is half. Do you not see this? You are correct when you say the butter is in one block,

      Ellta will need to calculate what 2/3rds of 40cm is.

      40 divided by 3 = 13.33 times 2 = 26.66

      The butter block needs to be 26.66cm x 20cm to be 2/3rds of 40cm.
