    Goodevening everyone. I am going through the Doughnuts course and the Chef using gelatine leaves in his creams. My question is how much weighs one gelatine leave, as I usually work with powdered gelatine and also I know that different makes have different sizes of gelatine leaves. I use 200 Bloom gelatine powder. Many thanks. Merry Christmas. Steve

    Hi, @stevevaeshotmail-com

    If a recipe calls for 3 gelatin sheets and we want to convert it to powdered gelatin, we must multiply the 3 gelatin sheets by 1.5 or 1.6, the result will be the amount of powdered gelatin you need.

    To hydrate gelatin powder or gelatin, hydrate it with 5 times the weight of gelatin or gelatin powder.
