In the entrements and tarts lesson in the chocolate and caramel tart recipe it calls for 2.5 “silver gelatine” im assuming they mean sheets.. whats the conversion of this gelatin to powdered gelatin? or how much gelatin mass do I need?
Thank you

Romi, hi
what is in receipt mentioned – powder gelatin in gramms or gelatine sheets?
for gelatin mass: for 1 part of gelatin you need 5 parts of water= 60 gr gelatine mass is 10 gr of gelatine +50 gr of water.
Usually silver gelatine is 160 blum (power of gelatine) and weight 2,5 gr per sheet .
Please check the receipt or video – usually chefs mentioned this points in receipt or video.
Best regards – Elena

Hi @romi-amid
If a recipe calls for 3 sheets of gelatin and we want to convert it to powdered gelatin, the 3 gelatin sheets must be multiplied by 1.5 or 1.6, the result will be the amount of powdered gelatin you need.
To hydrate the gelatin powder, hydrate it with water for 5 times the weight of gelatin or gelatin powder.
We hope this information is helpful.
Greetings.
