    Hi! I have a question regarding the silver gelatin leaves used in the entremets, particularly the ones in Mango and Lemon Entremet. From where I live, gelatin powder is easier to find in the shops compared to gelatin leaves. How do I convert, say for instance, 9 gr of silver gelatin to Knox gelatin powder? Thank you.

    1 sheet of gelatin is = 1.5 g or 2 grams of gelatin powder.

    Do you mean that if the recipe calls for 4 sheets of gelatin you must multiply 4×1.5=6

    Then you will need 6 grams of gelatin powder.

    If you want to give more consistency or firmness to your dessert, you can multiply by 2, it would look like this:

    4×2 = 8. You would need 8 grams of gelatin powder for a firmer consistency.
