    Can i leave my cake at room temperature to set after applying the ganache frosting? If yes how long will it take to set at room temperature? I don’t have an AC room to work with on ganache so i don’t want to put in the fridge for the fear of condensation

    Yes, you can leave your cake at room temperature for the ganache to set, but the time it takes to stabilize will depend on the temperature and humidity of your environment.

    Ganache setting time at room temperature

    At an ideal temperature of 18-22°C (64-72°F) with low humidity, ganache usually takes 2 to 4 hours to fully set.

    If the environment is warmer (above 24°C / 75°F), the process will take longer, and the ganache may stay too soft or even melt.

    Tips for setting ganache without refrigeration

    1. Place the cake in a cool, dry area

    Avoid direct sunlight or heat sources.

    If it’s too warm, keep it in a well-ventilated room.

    2. Avoid condensation

    If you decide to refrigerate it, cover it well with plastic wrap and let it come to room temperature before taking it out to prevent condensation.

    If your climate is very warm and humid, you might need to refrigerate it briefly before decorating, but be sure to take the necessary precautions.
