What is the best substitute for fresh yeast, I’m doing Antonio’s croissant dough.

The best substitute for fresh yeast depends on the recipe and what you have available. Here are some common options:
1. Active dry yeast: This is the most common substitute. Use half the amount of active dry yeast in place of fresh yeast. For example, if a recipe calls for 30 grams of fresh yeast, use 15 grams of active dry yeast. Dissolve it in warm water before using.
2. Instant yeast: Also known as rapid-rise yeast. Use one-third the amount of fresh yeast. For example, if a recipe calls for 30 grams of fresh yeast, use 10 grams of instant yeast. It doesn’t need to be dissolved in water before using.
3. Sourdough starter: If you have sourdough starter, you can use it as a substitute, although this will change the flavor and texture of the final product. The amount of sourdough starter can vary, so you’ll need to adjust according to the recipe.
It’s important to adjust the fermentation times and the dough hydration when substituting one type of yeast for another, as they can act differently.
