Ok, I understand, I’m asking you because we have two teachers where they teach croissant dough.
You can refrigerate or freeze the unbaked croissant dough and if they are already baked, you must wait for them to cool then wrap each croissant in plastic wrap and store them in an airtight container. This prevents the cold of the refrigerator from drying out the dough.
