    We recommend avoiding refrigeration if your cake is covered in fondant. The humidity that forms after refrigerating and then bringing the cake to room temperature can ruin your fondant. The texture changes completely, making the fondant sticky.

    The main enemy of fondant is moisture or water.

    If you’re in a cold climate, you can keep your cake at room temperature for 3 to 4 days. If you’re in a warm climate, it’s best to consume the cake the same day or store it in the coolest possible environment for up to 1 day.
