Should cake flour be used in place of all-purpose flour when baking cookies?

Cake flour has a lower protein content than all-purpose flour, which makes cookies baked with cake flour have a softer and more tender texture. However, all-purpose flour is the more common and versatile choice for making cookies, as it results in a firmer and crunchier texture.
If you prefer softer and more tender cookies, you can try cake flour, but keep in mind that the cookies may be more delicate. For most cookie recipes, all-purpose flour is generally the better option.
