If you don’t have a sous vide circulator (Roner) at home, you can improvise with a few methods to cook sous vide at a controlled temperature:
1. Pot and kitchen thermometer
Use a large pot with water and heat it to the desired temperature.
Use a digital thermometer to monitor the temperature and adjust the heat to keep it stable.
It’s a good idea to move the sealed bag occasionally to prevent uneven heat distribution.
2. Oven with a steam function or low-temperature setting
Some modern ovens have a steam function or allow you to set the temperature between 50-80°C, which can work for certain foods.
It’s not as precise as a circulator, but it can be useful for cuts of meat that tolerate slight temperature variations.
3. Slow cooker with manual control
Some slow cookers can maintain stable temperatures when set to the lowest setting.
If it doesn’t have precise temperature control, you can use an external thermostat (such as Inkbird) for better accuracy.
4. Controlled Bain-Marie on induction or gas
On induction stoves, some models allow you to set the exact water temperature without needing an additional thermometer.
On gas stoves, it’s more challenging, but you can use a heat diffuser and check the water temperature frequently.
If you’re looking for precision without investing in an expensive sous vide device, the best option is a slow cooker with an external thermostat or the pot and digital thermometer method with constant monitoring.
I recommend doing a small test to check if the method you choose gives you the results you’re looking for. If you try any of these alternatives, it would be great if you could share your results!
