    I made some chocolate eclairs and the filling was getting liquid I guess because of the hot weather. Are they supposed to stay refrigerated after making them ?

    I think that eclairs should be dry. If they stay in the fridge, they might be soft and wet.

    It’s better eat them within one day.

    In my family, it’s not a problem… 🙂🙂

    If you are in a warm climate, it is best to refrigerate them after preparing them and take them out 30 or 40 minutes before serving or consuming.

    Hi Gilary.

    Don’t leave eclairs in the fridge for too long, Orsolya is correct, the crispy shells will go soft.
