    In the course as part of the basic choux recipe he said we check the weight of the dough, it should be 955gm, that’s the total of all our ingredients, add the remaining egg to reach 955gm.

    But the total weight of all the ingredients he’s listed in the recipe easily exceeds 1kg where did he get the figure 955 GM’s

    And if I make half the recipe how shoild I calculate.

    Let’s say I use bakers percentage and make 20% of the recipe. I don’t want to commit to using 520gms of eggs.

    I believe you’re looking at the wrong recipe.

    In your message, you mention the course Éclairs: Second Collection.

    Indeed, in Lesson 8 – Chapter 2, the chef explains how to adjust the amount of eggs.

    The recipe you’ve attached is from the First Collection or the first Éclairs course, which is why the quantities don’t match the chef’s instructions of 955 grams for the choux pastry.

    I reviewed the recipe booklet for the Éclairs: Second Collection course, and the total ingredient amounts add up to 955 grams, just as the chef specifies.

    If you’re making half the recipe, you should end up with 477 grams of dough. If you have less dough, you can adjust it as the chef demonstrates for a full recipe.
