Hi Samia.
Yes, it’s best to use the fan. This helps distribute the heat evenly and allows the eclairs to dry out properly, resulting in a crisp exterior and a hollow interior.
To know when the eclairs are ready, they should be evenly golden and feel firm to the touch. If they seem a bit soft or give slightly when touched, they need a few more minutes.
It’s also recommended to leave them in the oven for a few additional minutes with the door slightly open to ensure they dry well and don’t deflate due to the sudden temperature change when they come out.

Hello Susan, thank you so much for taking the time to answer my questions I really appreciate the effort. I realized that my oven is the problem and I should consider getting an electric one for things like eclairs and macarons .
