Eclair dough (pâte à choux) can be stored in the refrigerator for about 1 to 2 days before using. To store it, place it in an airtight container or cover it well with plastic wrap, making sure the wrap touches the surface of the dough to prevent it from drying out.
If you’d like to store it for a longer time, you can freeze it in a piping bag without a metal tip. When you’re ready to use it, let it thaw overnight in the refrigerator before baking.
