If you’re making panettone dough or a similar type of dough and don’t have a double-arm mixer, the closest option would be a spiral mixer. This type of mixer is ideal for enriched and high-hydration doughs like panettone, as it develops gluten well without overheating the dough.
Another option could be a planetary mixer with a dough hook, although it may be less efficient and require longer kneading times. Be sure to work at low/medium speed to avoid overheating the dough.
