    Hi Sahmini.

Welcome to the Scoolinary community, and thank you for your question!

Yes, you can freeze donuts before frying them. The best time to do so is after the second proofing, just before frying. To freeze them properly, follow these steps:

    1. Shape the donuts and let them proof until they have almost doubled in size.

    2. Place them on a tray lined with parchment paper or a lightly floured surface.
    3. Freeze them in a single layer until firm (about 2-3 hours).
    4. Transfer them to an airtight bag or container for storage, up to 1 month.

How to thaw and fry them?

    1. Remove them from the freezer and place them on a tray lined with parchment paper.

    2. Let them sit at room temperature, covered with a cloth, until fully thawed and proofed again (this may take 1 to 2 hours, depending on the room temperature).
    3. Fry them in hot oil (around 175°C / 350°F) until golden brown and fully cooked inside.

This method helps maintain the donuts’ texture and flavor without compromising their fluffiness.

    Greetings.
