    Hello

    I wanted to ask for additional information on nonbaked croissants in the freezer, and also in the fridge.

    as I see in the course, Anthony says that the dough before lamination can last up to 7 days in the freezer. but what happens when we finish the lamination and roll the croissants? how long can I keep on fridge rolled non-baked croissants, how long can I keep rolled non-baked croissants in the freezer?

          Ohrid is a small beautiful town with crystal clear water Lake called Ohrid Lake and it’s under Unesco’s protection.

          Our cullinary culture is based on mediteranian and ottoman cusine. We love grilled meatballs – Kebapi, oven baked beans – gravce tavce. Ohrid lake’s trout is very famous and can be a perfect dish. Also, oven baked eel – Jagula vo furna, which is a traditional food of my City.

          I will try to make some photos from our cusine and share with you as soon as possible.

    Hi Turan

    Croissants already formed without baking can be kept for up to 2 months in the freezer. Once they are ready before the final fermentation, they should be frozen for 3 to 5 hours. Once frozen it will be easier to separate and wrap each one.

    To defrost:

    One night before using the dough, put it in the refrigerator without the transparent film and then ferment according to the information indicated in the recipe for the last fermentation and then you can bake.

    When refrigerated, croissants can last 6 to 8 days if stored properly and all storage protocols are considered.
