    The size of the baking tray for croissants depends on the space they need to properly expand during fermentation and baking.

    In the first edition of Antonio Bachour’s course recipe, you get 16 croissants, and each triangle before shaping measures 38 x 9 cm. Considering this, the ideal choice is to use standard 60 x 40 cm (professional-size) baking trays or similar.

    For proper spacing, it’s recommended to place 6 to 8 croissants per tray, ensuring they have enough room to expand without touching. If you’re using smaller trays, make sure to leave at least 5 cm of space between each croissant.
