    Hi there, has anyone attempted Antonio’s croissants? I have no access to a big industrial mixer and of course the cost of butter in asia is pretty expensive.

    Can this recipe be halved?

    You can do the process by hand but it will take a little longer to obtain the gluten from the dough.

    You can try to prepare half the recipe, we recommend having an extra 50 to 75 ml of water on hand since depending on the strength or percentage of protein you may need a little more liquid than the recipe indicates.
