    At 1:52 into the Détrempe: Preparation of the croissant dough video, Chef Bachour adds something that isn’t listed in the ingredients or shown on the table with the other ingredients. What is this?

    Hi, @marie-camprini

    They are the remains of the sugar at the time of adding it, it is not an additional ingredient. What the chef does is return the bowl to add the sugar that is stuck.
