Posted by Elli Kokotini on November 26, 2023 at 09:27Hi ! as I saw in the tutorial we have to freeze the dough 50 X 30 in dimension Unfortunately my freezer is not that wide is there a chance to put it in the fridge? is there another solution to freezing? thank you very much

I had the same problem. You can do what they do for store-bought frozen pastry – line it with parchment paper and roll it up. Unroll once it’s defrosted enough to do so without cracking. Enjoy your croissants!

If the size of your freezer is smaller, you could try letting the dough rest in the refrigerator but for a longer period of time.

You can wrap it up in plastic wrap then fold it in thirds then put it in the freezer. Just rest it in the refrigerator for at least an hour before unfolding it to laminate.
