The course “Christmas Cakes and Bûches“, is just one example of many.
In the video “Hazelnut gianduja elaboration”, no mention of the mold type and size.
Looking at the recipe, nothing.
Looking at the list of “Necessary Equipment“, I can ASSume it is the “mini savarin mold“. But which diameter?
The tree ball interior assembly“, what mold is used here? Mystery. From the list, I can only ASSume it is “Universe Mold“, because a search on Google found a mold by Silikomart named UniversO. But we can’t know for sure, as the Universo mold exists in several sizes, and who knows “Universe Mold” is meant for this dessert or one of the others?
Then Assembly of The Tree Ball“, the sphere molds. What diameter? Nothing.
Then “Tree Ball Decoration“, how to make the White chocolate collars? Not shown.
These are just examples from one lesson in this course, and it’s the same for the other lessons in this course.
It is very frustrating and exhausting to try and decipher the classes. Success in pastry is accuracy, and there is no accuracy here.
Personally, I gave up on this course because of this and will not prepare anything from it.
I hope this reaches someone there that listens and maybe something will be done about it.
