    In the recipes, it is stated that 5 leaves are added for cheese croquettes, and 4 for chocolate croquettes. What interests me is the exact grammage, because I noticed that visually the gelatin leaves do not match the ones I can buy in my city. Thank you in advance for your response.

    Gold gelatin sheets: 2 g each

    Silver gelatin sheets: 2.5 g each

    Bronze gelatin sheets: 3.3 g each

    Titanium gelatin sheets: 5 g each

    If the recipe calls for 4 gelatin sheets without specifying the type, it’s best to assume they are 2 g each (gold), which would total 8 g.

    To ensure the correct texture, you can weigh the gelatin available in your area and adjust the quantity accordingly to match the same total weight.
