<font style=”vertical-align: inherit;”><font style=”vertical-align: inherit;”>Hello. I’m currently watching the video of “butter block & lamination” in the croissant course. The chef said “cold butter”. I would like to know what temperature is the correct temperature that refers to cold butter.</font></font>

    Hi @quinnyc68gmail-com

The temperature of the butter for laminating is between 13 to 14 degrees Celsius.
