    Hi, I have a few questions about the <b style=”font-family: inherit; font-size: inherit;”>Breadmaking Essentials course: Instructor Lutz Geißler bakes one Milk Bread in each oven — couldn’t he bake two or three at once in a single household oven? Also, if I only had glass molds to bake these breads, would I need to lower the temperature? Is there anything else I could do, or is it completely inadvisable to bake bread in glass molds?

    Hi Ana.

    Thanks for your question , it’s a great one!

    Yes, you can absolutely bake two or even three milk breads at the same time in a home oven, as long as the heat circulates well and there’s enough space between the pans. Ideally, place them on the same rack or use two racks with convection (fan) to ensure even baking.

    As for using glass pans, you can use them, but there are a few important things to keep in mind:

    Lower the oven temperature by about 10 to 20°C, since glass retains heat more and transfers it more slowly. This helps prevent the outside from browning too quickly while the inside remains underbaked.
    Preheat the oven with the glass pans inside, to avoid thermal shock that could cause the glass to crack.
    Grease the pans well or use parchment paper, as glass tends to stick more than other materials.

    Baking bread in glass pans isn’t completely discouraged , it just requires a few adjustments to get good results. And if you notice the bottom is too pale, you can remove the bread from the pan and place it directly on the rack for a few extra minutes at the end.
