    How shelf stable are some of the items in the course. The Bicolor Croissant with the Strawberry Marscapone filling and The Frangipane tarts. How long can they go without being refrigerated?

    Hi Joseph

    Filled croissants in optimal conditions can last up to 24 hours. This does not mean that they cannot be consumed after that period, they simply lose some of their characteristics such as being crunchy.

    The Frangipane tart at room temperature (22°C to 23°C) will also last for 24 hours. After this period it should be refrigerated.
