    Amazing course, love it. I have two questions only and that is can I use the griddle Adam uses on a gas fire oven top? He uses it on an electric top oven.Also burgers cooked medium? I never really understand this as ground meat should always be cooked to the minimum temp of 72 74 degrees internal. Am I wrong?

    Yes, if you can use the griddle that the chef uses on a direct-heat stove, you just have to be careful since a conventional stove sometimes has stronger heat.

    Answering your second question, the safe internal temperature for cooking a ground beef hamburger is at least 160°F (71°C). This ensures that any potentially harmful bacteria are destroyed and the meat is safe to eat. It is recommended to use a kitchen thermometer to check the internal temperature of the hamburger.
