I want to try one of Bachour´s recipes and the recipe asks for almond paste 70 %. How does one make that at home? Is it a mixture of 70 % almond butter and 30 % sugar mixed together?

70% almond paste is a product that is already made by the Valrhona brand, and it is composed of 100% almonds, 100% pistachios, 100% sugar, and 40% fat.
I think if you want to recreate it at home, you can use the same percentages starting with a praline and then process it in a food processor or Thermomix at maximum speed for 12-15 minutes in intervals. Don’t set the speed to maximum right away; gradually increase it. You will need to open the container several times and use a spatula to push down what has stuck to the sides.
The result will be a paste or butter with a smooth and creamy texture. If there are still lumps, blend for a few more minutes.
Tips: For a more complex flavor, you can add a pinch of sea salt or a few drops of almond extract. If you prefer a finer paste, you can pass the mixture through a fine sieve after processing. This recipe is quite flexible and can be adjusted to your personal taste, but it retains the essence of Valrhona’s 70% almond paste.
