    Hello! The chef says, when you making the cornstarch alfajores the filling of dulce de leche must be hardened. How do you harden it? You just leave it to cool completely or needs something more that that? Thanks.

    There are different types or brands of dulce de leche on the market that you can buy or you can also prepare yourself. What the chef mentions is that you should use a dulce de leche that has a consistent and thick texture to fill the alfajores.
