    I am try to make baguettes in my unox combi oven but i am not getting perfect baguettes texture. please suggest me the temperature and time to get perfect one. i want to make baguettes like this.

    To bake baguettes in your Unox combi oven and achieve the perfect texture, follow these steps:

    1. Oven Preheating:

    – Preheat the oven to 250°C with steam, if possible, to ensure the dough retains the necessary moisture for good development during baking.

    2. Baking:

    – Phase 1: Bake at 250°C with steam for the first 10-12 minutes. This will help the baguettes expand well and develop a crisp crust.

    – Phase 2: Reduce the temperature to 220-230°C and continue baking without steam for an additional 10-15 minutes, or until the baguettes are golden brown and crispy.

    3. Steam Control:

    – Steam is crucial during the first few minutes of baking, as it helps keep the crust flexible for good development. If your oven has steam control, make sure to activate it initially and turn it off during the second phase.

    4. Finishing:

    – Once the baguettes are golden brown, turn off the oven and leave the baguettes inside with the door slightly open for a few minutes to ensure the crust remains crispy.

    If you’re having issues with texture, it might be helpful to review the dough hydration, fermentation time, and shaping of the baguettes before baking. Hydration should be around 70-75% for well-aerated baguettes.
