I’ve purchased Antonio Bachour’s course for croissants dough.
He said the butter should be 30×32 cm.
And the dough should be 55×30 cm.
I did exactly the same,
but it seem bigger than him.
By the way 3/4 of 55 is 36 cm,
not 32 cm.
Hope you can help me.

Hi.
I believe the measurements you used are not correct. According to the recipe, the dough should measure 50×30 cm, and the butter block should be a square of 30×30 cm.
Keep in mind that the perspective of a video can look different from real life. The way the cameras are positioned, the angles, and how far or close they are during recording can create the illusion that a preparation is larger or smaller. This is why the chef provides exact measurements. It’s better to follow the measurements given in the course rather than relying on the visual appearance in the video.
If your dough measures 50×30 cm and your butter is 30×30 cm, there shouldn’t be any issues.

You are talking about the first version of croissants course.
I’m talking about the second one!
The butter should be 30×32
And the dough 50×30!
I’m not talking only about how it looks in the video, but how it looks in my dough!
You can see the picture.
What I did at last, was cutting the dough.
But it’s not okay.
Maybe you can ask Antonio.

I understand. In your previous message, you didn’t specify which of Chef Antonio Bachour’s courses you were referring to, and I also didn’t ask for clarification, so I apologize for overlooking that detail.
What we recommend is that you follow the instructions provided in the course, which state that the dough should measure 55×30 cm. In lesson 9, starting at minute 5:00 of the video, you can clearly see how the Chef rolls out the dough and uses a ruler or measuring tape to ensure it reaches the specified dimensions.
On another note, it is currently difficult to contact Chef Bachour due to his busy schedule and numerous commitments, so we don’t believe he will be able to respond to this question quickly.
In any case, we encourage you to follow the instructions from the course. You can also check our Cooking Feed section, where several students have successfully completed this recipe without major issues.
