    In this class it states when on the second day to use only 50g of the alive starter from the previous day (which had made 100g) and feed it, but my question is what do I do with the remaining amount it I start off with? Do I throw it out? Do I use it for something else?

    Hi María.

    When making sourdough, if you need to discard part of the starter, you don’t necessarily have to throw it away. You can use the leftover in several recipes. Here are some ways to make the most of it:

    -Pancakes or waffles: Adding sourdough discard to the batter gives it a touch of flavor and improves the texture.

    -Cookies or crackers: You can add it to cookie dough or make sourdough crackers.

    -Pizza: Using discard in pizza dough can give it a unique flavor.

    -Cakes or muffins: Some baking recipes also allow you to incorporate the discard to enrich the taste.

    These are useful ways to make the most of the discard without wasting it.
