What you'll learn
This course is designed to make impressive and unique croissants, through wonderful recipes, based on an easy-to-understand methodology.
Pain Suisse or ‘Swiss bread’: A classic pastry adapted to the croissant model. Its layered complexity is revealed through a special laminating technique. It is filled with pastry cream, chocolate pieces, and candied orange.
Chocolate New York Roll: The trending croissant roll shape! It can be stored in a display case and filled to order. This time, we prepare a chocolate pastry cream and a crunchy chocolate coating.
Brownie Croissant: The brownie that everyone loves, paired with pastry cream to enhance its creaminess and smooth texture. It will be presented in two shapes: square and round.
Bow tie Croissant: Its charming bow-tie shape will definitely turn heads and can easily be adapted into a butterfly shape. It is filled with a creamy strawberry filling.
Pistachio flan cake Croissant: Inspired by the ‘flan cake’ dessert. The base is an almond sponge cake with blueberries, topped with a set pistachio cream. It is finished with red berries.
Raspberry Flower Croissant: A red flower with a raspberry gelled heart, topped with compote and edible gold.
In this course, in addition to the recipes themselves, you will also learn different cooking and pastry techniques that will serve you on numerous occasions.
