From jam to ganache to cookie paste, this course does not only teach how to make different cheesecakes, but also teaches techniques. I like also how the equipment used are the household appliances and tools we all probably have in our kitchens already. The cured sheep cheese in the basque cheesecake is a beautiful and welcome variation I haven't seen anywhere else.

Beautiful recipes and technique. The one I was most mesmerised was to cotton cheesecake, I will clearly do it with the first occasion. To my surprise there was a little gem hidden there. I didn't know that I can vacuum seal the jam jars by burning a small quantity of food grade alcohol on the surface. That looks like magic . Thank you!
