Chef Carme Ruscalleda comes from a family dedicated to agriculture, so from a young age, she understood the importance of local and seasonal products. This trait can still be seen today in her creations and her interest in foods that promote healthy eating. After finishing her studies, she began working in her family’s delicatessen, where she realized her true passion for cooking.
Things changed when she decided to add another product line to the family deli, and they began to offer homemade take-out food.
This not only provided them with greater variety but was also a total success, prompting Ruscalleda to take the plunge and open a restaurant with her husband, Toni Balam, which soon launched her to the top of the culinary world and became one of the most recognized restaurants in the country.
Currently, Ruscalleda has three restaurants: Moments and Blanc in Barcelona, and Sant Pau in Japan. All three are very successful and are highly regarded for their culinary appeal. The added value that continues to be emphasized today is the importance of the product, which is the chef’s personal trademark and enhances the gastronomic quality of her dishes, all the while incorporating innovation and creativity into her recipes.
